Why does jelly set?

Mrs O’Sullivan’s class in Coisceim  investigated what is it that makes jelly set.

We learned that jelly contains gelatin.

The  fibres in the gelatin come apart when the jelly is melted. We watched the jelly from the packet melt as we added the hot water, and talked about bonds breaking down.

We saw how they came together again when the jelly is cooled making it set.

We all agreed that the best part of this experiment was getting to eat the jelly afterwards!!
